AAAHHHH Cold Soup!

Hi Fit Friends,

Recently I made Gazpacho and was pleasantly surprised. I'm not much for cold foods, so I never thought to have chilled soup. I'm not a big fan of ice cream, popsicles, or even ice, so who would have thought I would like cold soup?! It was so yummy I thought I would share a couple of recipes with you. They are super low in calories and you get a lot of bang for your buck - so many nutrients! Zip up your jackets and enjoy the chill!






Fantastic Fruit Soup

Ready In: 25 Min
Servings 8


Ingredients
1 fresh peach, pitted and chopped
6 fresh strawberries, hulled
1 apple, cored and chopped
1/2 cantaloupe - peeled, seeded, and cubed
1/2 honeydew melon - peeled, seeded, and cubed
1/4 cup cream of coconut
1 teaspoon fresh ground nutmeg
2 teaspoons honey
2 tablespoons fresh lime juice
1 pint fresh blueberries, rinsed

Directions

1.Combine the peach, strawberries, apple, cantaloupe, and honeydew in a blender; blend until only slightly chunky, 20 to 30 seconds. Pour in the cream of coconut, nutmeg, honey, and lime juice; blend until smooth.
2.Divide the mixture evenly between 8 bowls. Top each bowl with a few blueberries and serve cold.

Easy Gazpacho

Ready In: 2 Hrs 20 Min
Yield 10 servings

Ingredients

4 cups tomato juice (I like Organic Very Veggie Spicy)
1 onion, minced
1 green bell pepper, minced
1 cucumber, chopped
2 cups chopped tomatoes
2 green onions, chopped
1 clove garlic, minced
1 carrot, peeled and chopped
3 tablespoons fresh lemon juice
2 tablespoons red wine vinegar
1 teaspoon dried tarragon (use fresh if you have it)
1 teaspoon dried basil (again - use fresh if you can)
1/4 cup chopped fresh parsley
1 teaspoon white sugar (optional)
salt and pepper to taste

Directions

1.In a blender or food processor, combine tomato juice, onion, bell pepper, cucumber, tomatoes, green onions, garlic, carrot, lemon juice, red wine vinegar, tarragon, basil, parsley, sugar, salt, and pepper. Blend until well-combined but still slightly chunky. Chill at least 2 hours before serving.
