Interesting facts!

Hi Fit Friends,

This week I thought I would share a couple of interesting facts that I recently discovered:

1. From the Organic Consumers Association:

On the Friday before Labor Day, despite limited and inadequate safety-testing, the Food and Drug Administration (FDA) ruled that industrially-raised salmon, genetically engineered to eat constantly and grow rapidly are safe for human consumption - even though the FDA found that these fish contained elevated levels of growth hormones, including insulin-like growth factor-1 (IGF-1), a suspected carcinogen. AquaBounty's genetically engineered fish will be the first genetically engineered animal commercially sold as food in the United States. Under current law, these Frankenfish will not be required to be labeled as genetically engineered, depriving consumers of their right to choose non-GE food.
FDA's approval of AquaBounty's IGF-1 tainted salmon mirrors its controversial approval of Monsanto's genetically engineered recombinant bovine growth hormone (rBGH) in the 1990s. Although rBGH is banned in Canada, the EU, and on organic dairy farms, it is still injected into more than 10% of U.S. dairy cows. The milk from cows injected with rBGH, like genetically engineered salmon, contains higher levels of IGF-1.
Elevated levels of IGF-1 in humans is linked to colon, prostate and breast cancer.

If you're going to eat fish, remember to buy wild caught fish.

2. Do you know what the third leading cause of death in the U.S. is?

Well, cancer is first, heart disease is second, and third is MEDICAL CARE! That's right. According to the Journal of the American Medical Association the 3rd leading cause of death to Americans is our own health care - medication errors, unnecessary surgeries, errors in hospitals, hospital borne infections, and most of all ADVERSE DRUG EFFECTS.

What do I take from that - Let food be your medicine, and medicine be your food.

Speaking of food - here's a recipe that I'm going to try this week:

Comforting Corn Chowder

Serves 4

Ingredients:
2 15-ounce bags frozen corn kernels
2 potatoes, diced
1/2 onion, chopped
1/4 teaspoon celery salt
2 cups vegetable broth
1 cup soy milk
1 tablespoon cornstarch combined with 2 tablespoons water
Black pepper
1 2-ounce jar chopped pimentos, drained (optional)

1. In a large pot, combine the corn, potatoes, onion, celery salt, and broth and bring to a boil. Reduce heat to medium and simmer, stirring frequently, for 5 minutes.

2. Add the soy milk and return to a simmer. Stir in the cornstarch mixture and stir until thickened slightly. Season to taste with pepper.

3. Ladle the soup into bowls and garnish with pimentos, if using.

Sounds yummy!

Eat Intentionally,

Cindy

That chowder recipe does sound good, although I thought you'd moved away from soy? I need to avoid it myself, so I'd sub in some milk but yes, I'll have to try that one.
